I think you should wait, I tried protecting an in ground pomegranate, and it suffered more with the protection, and this was a older pomegranate than yours. I am in 7b too. 'Sumbar' fruit are supposed to be juicy, and are supposed to have very soft tender seeds.

However, the fruit had no flavor whatsoever and the arils were shriveled and brown despite the fruit looking good from the outside.

I am not surprised at all, I had a pomegranate die to beneath the ground level before, and it started coming back out of the ground, directly from the roots in September. The roots of a pomegranate can actually be an underground clone of the pomegranate bush. I have learned this from personal ...

I find that one part soil to one part perlite or one part rice hulls, is best for rooting cuttings, the soil that I find works the best is moistened coco coir. Seed starting soil is one of the worst things to root cuttings with, it's way too fine and compressed.
